This recipe can be pulled together in minutes. It’s rich in variety and the flavors work really well together, which makes for a wonderful lunch, a light dinner, or a tasty supper snack.
Ingredients:
1/2 pound boneless chicken
4 tablespoons bottled jerk marinade
1 tablespoon cream cheese
2 (12-inch) flour tortillas
4 leaves red or green leaf lettuce
8 very thin slices red onion
1/2 cup prepared mango, peach or apricot chutney

Directions:
- Toss the chicken with the marinade, set aside & let marinate
- Heat skillet and add chicken, cover and let cook over medium heat for 5-6 minutes on each side or until juices run clear
- Remove from skillet and let cool before slicing
Pulling it together:
- Spread cream cheese on the tortilla and place a few leaves of lettuce on top.
- Transfer chicken onto the lettuce, add red onions
- Warm the chutney in the microwave for 60 seconds
- Pour over chicken
- Roll up tortilla tightly and serve.
