Jerk Chicken Wraps

This recipe can be pulled together in minutes.  It’s rich in variety and the flavors work really well together, which makes for a wonderful lunch, a light dinner, or a tasty supper snack.

1/2 pound boneless chicken
4 tablespoons bottled jerk marinade
1 tablespoon cream cheese
2 (12-inch) flour tortillas
4 leaves red or green leaf lettuce
8 very thin slices red onion
1/2 cup prepared mango, peach or apricot chutney

  1. Toss the chicken with the marinade, set aside & let marinate
  2. Heat skillet and add chicken, cover and let cook over medium heat for 5-6 minutes on each side or until juices run clear
  3. Remove from skillet and let cool before slicing
Pulling it together:
  1. Spread cream cheese on the tortilla and place a few leaves of lettuce on top.
  2. Transfer chicken onto the lettuce, add red onions
  3. Warm the chutney in the microwave for 60 seconds
  4. Pour over chicken
  5. Roll up tortilla tightly and serve.
