Ingredients:
• 4 ripe tomatoes
• 1 medium cucumber
• 2 tbsp balsamic vinegar
• ¼ sliced red onion
• 1 tsp extra-virgin olive oil
• 1/4 tsp sugar
• 2 tsp chopped fresh basil
• Freshly ground black pepper to taste
Preparation:
Slice tomatoes, cucumber & red onion thinly and place in a medium bowl. Combine vinegar & oil. Drizzle over sliced tomatoes and cucumber. Toss, and then sprinkle with chopped basil. Refrigerate or serve at room temperature.
